Kudampuli (Malabar tamarind) is a dried, rind-based souring agent used primarily in Kerala fish curries and, occasionally, in vegetarian dishes. To use, soak 1-2 pieces in Iuke warm water/ Normal water for 10 minutes, then add both the rind and water to the dish, typically during the boiling stage.
